How to prepare lime juice

Due to the chemical and alkaline properties of lime powder, this substance itself should not enter the body directly or come into direct contact with the skin of the hands, but lime water should be prepared and used for various applications. To prepare lime water, we must pour 1 kg of hydrated lime in 5-6 glasses of water and after stirring, give enough time for the lime powder to settle. Since hydrated lime does not dissolve in water; Therefore, it settles at the bottom of the container and a white or milky liquid remains above it, which is called lime water. Lime water has the properties that we need from hydrated lime for edible applications.

Using lime juice in making jam

After preparing lime juice, we soak the peeled and cut fruits in lime juice for 24 hours (picture below). After that, we remove the fruit pieces and then soak in water for 8-10 hours. Then we remove it from the water and use it to make fruit pieces, jam or compote. The advantage of this work is that it helps the fruit to maintain its texture during cooking, and in addition to maintaining its shape, it has a crisp and fresh state. Another advantage is that this happens while the need for sugar is not too much and sugar is normally used to make jam.
